Flavour and aroma

Raw seeds are sharply bitter and astringent. Gentle dry roasting or blooming in hot oil brings out warm, nutty notes with an aromatic, maple-like fragrance. Over-roasting turns them harsh and acrid, so keep the heat in check.

Tadka / tempering Dough / batter Sweets and desserts

Start them in your tadka to flavor dals and sabzi gravies. Whole or coarsely ground seeds are classic in mango, lemon, and chilli pickles for both flavor and preservation.

They are essential in Panch Phoron, and roasted seeds go into South Indian sambar powder and rasam powder to balance tamarind. A small quantity is ground with soaked lentils and rice for dosa or idli batter to assist fermentation and crispness, and powdered seeds show up in winter sweets like methi ladoo with jaggery, nuts, and ghee.

Origin and where it grows
