What it is
Garam masala is an iconic Indian spice blend made from roasted and ground spices: black peppercorns, cloves, cinnamon or cassia, cardamom, cumin seeds, coriander seeds, and nutmeg or mace. The name means hot spice mixture, referring to internal warmth rather than chili heat.
In Bengali cooking it’s called gorom moshla, commonly a simple fragrant trio of green cardamom, cinnamon, and cloves. In Gujarati homes you’ll hear garam masalo.
